Neither foam nor spring is objectively better: they solve different problems, and the right one depends on what's actually bothering you about your current mattress.
Foam's biggest strength is contouring: it distributes weight across the whole surface rather than concentrating it at a few pressure points, which is why it's often recommended for joint or back discomfort. It also isolates motion well, so a restless sleeper is far less likely to wake their partner.
Spring mattresses breathe better, since the coil layer allows more airflow than a solid foam core, worth weighing if you tend to sleep hot. They also tend to feel more responsive underfoot, with a bit more bounce, and pocket-spring constructions in particular do a reasonable job of isolating motion too, just not quite as well as foam.
